Watermelon Rind Pancake is an enjoyable easy to make a naturally sweetened pancake with zero-waste impact. Watermelon is a rich source of fiber and helps maintain regular bowel movements. Jaggery is loaded with antioxidants and minerals like zinc and selenium. It is helpful in solving menstrual problems. It is rich in iron and folate and reduces the risk of anemia.
Ingredients
- Chopped watermelon rind 2 ½ cups
- Parboiled rice 1 cup
- Coconut Milk ½ cup
- Jaggery 2 gms
- Himalayan Pink Salt 1 gram
Method
- Add all the ingredients in a blender and process to a smooth but slightly grainy paste.
- Add water to make thin and runny
- Grease the pan and pour ladleful of the batter. Let it cook for 2-3 minutes.
- Flip the pancake and let it cook for 1-2 minutes. Serve hot.

- Use parboiled rice instead of basmati rice.
- Alternatively, brown rice or black rice can be used.
