Saramya (rice pancake) is a scrumptious savoury pancake rich in Magnesium, phosphorus, manganese, selenium, iron, folic acid, thiamine and niacin. Besan is rich in protein, iron, folate copper and antioxidants. Its low fiber content may help with digestive issues.
Ingredients
Rice Cooked 2 cups
Turmeric 1 tsp
Salt ¼ tsp
Besan Flour 1 tbsp
Filtered Oil 1 tbsp
Method
• Put the cooked rice in the bowl, add all the spices and besan flour and mix it well.
• Then divide the mixture into 5-6 portions and roll it.
• Flatten each portion and make it like a mini pancake
• Heat the tawa and then smear same oil on it.
• Put the mini pancake on the tawa and roll it up and down till both sides become slightly brown.
• Repeat the steps for all the other portions and serve hot with chutneys or dip
Healthy Cooking Tips
• Use parboiled rice instead of basmati rice
• Alternatively, brown rice or black rice can be used.
• Do not strain the rice water away. Use it in other preparations like soups.
• Besan is a plant-based sourced of protient, ideal for vegetarians and vegans. It is a source if iron, folate and copper and provides satiety and energy. It stabilizes blood sugar, which prevents diabetes. It also contains phytochemicals called saponins that act as antioxidants.
